Pierre Gagnaire has brought his expertise to many restaurants around the world – from London to Las Vegas, Tokyo, Hong-Kong and Dubai – but his flagship establishment remains his eponymous restaurant in Paris, which has had 3 stars in the Michelin Guide since 1993. Today Pierre Gagnaire executes a signature cuisine concocted around a theme, an atmosphere, a sensation or even a rhythm like that of a piece of jazz, of which he is a great fan. The quite unique décor which has book pages stuck on the walls with a superimposed seafood motif, is the work of the designer Carolyn Quartermaine.
